On this thread I will be showcasing Japan's best beef and yakiniku eats from the three big beef cities; Gifu, Yamagata, and Mie...I haven't been to Kobe yet but if it's anything like Gifu then it's the best. First, we have "Hide Gyu" ひで牛 in the city of Takayama, Gifu. This beef comes from virgin female cow and is fed beer and given daily massages everyday so it gets fat, thus fatty beef. The restaurant in the photo is by far the most popular of all the beef haunts in Gifu, and the oldest. Adjacent to the restaurant is a meat processing center so you can't get any fresher than that.
